Monomakh is the first Russian—Vyzantine cuisine restaurant on the 90th floor of the Federation Tower.
The project draws on the image of Vladimir Monomakh and combines northern Russian products, ancient gastronomic motifs and a more refined, almost ceremonial presentation in one concept.
The interior was designed in the spirit of restrained luxury and with references to ancient Russian architecture, but without direct stylization. Inside there is dark wood, stone, brass accents, soft semi—darkness and panoramic windows overlooking the city.
The kitchen is headed by Yaroslav Balen (Residenz Heinz Winkler, Sansa). The menu is built around game, northern fish, oven dishes, honey, berries and spices associated with the Byzantine tradition. Special attention was paid to pickles and fermentation: in this section, not only vegetables are used, but also herbs, flowers and buds. The dessert menu has been put together for familiar tastes in a new interpretation — from Tula gingerbread to buckwheat tiramisu.
The bar card was developed by Nikita Dyachenko (Folk, Blanc, Yauza Place, Koktebel Bar) together with Timur Vorotyntsev (Folk, Koktebel Bar). It is based on wild herbs, wild berries, seasonal ingredients, its own tinctures and fermentations. In addition, guests are offered a compact wine list with an emphasis on Russian labels.
