«Rubel» is a restaurant of modern Russian cuisine by AVA Team, located on the first line of GUM, with a view of Red Square.
The first Russian project by Anton Pinsky, Vitaly Istomin and Artem Losev combines classical architecture with modern design: high vaulted ceilings, panoramic windows with a view of the Kremlin, an open kitchen, marble surfaces, original paintings and a large crystal chandelier. During the warmer months, a spacious veranda is open, and in the evenings, live music plays in the restaurant.
The menu reinterprets the Russian gastronomic tradition in an original presentation. Among the listed dishes are stroganina, fish pies, dumplings, cutlets, jellied Kamchatka crab, sandwiches with sea urchins, pearl barley porridge with northern shrimp, and quail with morels.
