Evgeny Vikentev, former chef of the Beluga and Vinny Shkaf restaurants, co-owner of Hamlet + Jacks (St. Petersburg) and Cell (Berlin), and his St. Petersburg partner, Elena Antonicheva, have launched a new modern bistro in Moscow.
The concept of Centrale Bistro Evgeny Vikentev is based on a frequently updated menu, dominated by Italian, French, and Spanish influences. The dishes are prepared using seasonal farm-grown ingredients and innovative flavor combinations. Evgeny Vikentev created the menu, and Chef Nikita Nikitin (formerly sous-chef at Moscow’s Beluga) is responsible for its execution in the kitchen.
